Apron On: Raw Snicker layer slice


Who doesn’t love a snickers bar, it’s the ultimate indulgent, “I’m having a chocolate bar, so what the hell lets go all out” kinda chocolate bar 😹

I’ve wanted to recreate this one for a while I LOVE nut butters and make enough of it (sometimes I think I’m living in WW111) and worried we might have to go on rations at some point we have that much of it!

So, here it is. My indulgent, but raw Snicker slice

Ingredients:

Later 1: chocolate

5 tablespoons coconut oil 80g

7 tablespoons cacao powder

6 tablespoons maple syrup

pinch of salt

30g chopped walnuts


Layer 2: nuts galore

3 tablespoons peanut butter

100 g Oat flour (blitzed oats)

1 tablespoon melted coconut oil

4 tablespoons maple syrup


Layer 3: Caramel

Medjool dates (about 10)

Warm Water

1 tablespoon coconut oil

1 tablespoon peanut butter


Method:

Melt the coconut oil for layer 1 in a bain marie and add the other ingredients except for the nuts and stir until smooth and glossy.

Set aside a tablespoon of the chocolate, and then add the chopped hazelnuts to the remaining chocolate. Pour into your lined tray and place flat in your freezer to set.

Next, mix all of the ingredients for the layer 2 until well combined and set aside.

Pour around 100ml boiled water over the pitted dates & leave for around 15 minutes until softened. Pour the dates with any remaining water into a blender and add the remaining ingredients & whizz until smooth.

Spoon layer 2 onto the set raw chocolate base, smoothing it out as much as possible with a spatula and place back in the freezer for 15 minutes.

Then do the same with the caramel on top of layer 2.

Drizzle the remaining chocolate on top and then leave to set in the fridge or freezer for at least one hour.

I keep mine in the freezer and slice off using a sharp knife. It keeps for longer and I like the slightly frozen texture. It also meld reasonably quickly!
