Picture one Sunday gloomy London day, one very fidgety Nina, and one hungry husband….
A few hours later, a few greener fingernails, and a messier kitchen… the Spirulina Cookie Monster is born.
Now this is definitely a bake that has to have a disclaimer of “don’t judge a book by its cover” as it is by far the ugly duckling of cookies, but to reassure you… husband quotes, “probably one of the best cookies you’ve made, can I have another?” (3 cookies down).
•1 cup crunchy peanut butter
•1/2 cup of maple syrup or honey
•1/2 tsp vanilla essence
•2 tablespoons coconut oil, melted
•1 tablespoon Spirulina powder, I used Funktional Foods (available at Aldi)
•1/2 cup oatmeal flour
•1/2 teaspoon baking soda
•1/2 teaspoon cinnamon
•pinch sea salt
•Preheat oven to 180 degrees.
•Mix together all the wet ingredients in a medium bowl
•Add all the dry ingredients to a separate bowl
and mix and then add the dry ingredients to the wet ingredients and stir well.
Spoon onto a lined baking tray in tablespoon size portions. Careful not to dollop too much as the dough will spread when in the oven.
Top left size is the aim as the others spread too much and were a little delicate (see pic below before the oven!)
•Cook for 15 minutes.
•Cool before serving.
