Apron On: Peanut Butter Power Balls

These are the result of being a woman. Multitasking should be my middle name, however multitasking is not always my best game! These power balls were a pleasant mistake at an attempt to make nut butter. If you read my other posts you’ll not only know I’m obsessed with peanut butter, but I also love making it. I always roast my nuts to get the oils going, ready for whizzing them up in the processor. This time round I slightly (understatement) over toasted them in the oven so when it came to processing them they went really dry and too crumbly to spread, so being one not to waste food, I added some oats, a dash of coconut oil, and a few extras (see below) and voila out came these delicious bad boys! The Boyf is obsessed, he literally demolished 3 of them in one sitting. These are great for an afternoon snack on the go, pre workout power snack (hence the name) or crumbled into Greek yoghurt. The options are endless!

Peanut butter power balls

Nut butter cacao and goji berry power balls


  • 500g peanuts (unsalted plain peanuts)
  • 3 heaped tablespoons raw cacao powder
  • 1 heaped tablespoon coconut oil
  • 1 cup of oats
  • 3 tablespoons maple syrup



•Preheat the oven to 150 degrees, spread the nuts over a baking tray and roast in the oven for around 20 minutes until toasted (dark golden colour (not charcoal!)

•place the nuts in the food processor on full into almost smooth

•add the rest of the ingredients (except your goji berries) and mix on low until well combined

•Stir in the goji berries and then form into small compact balls around the size of a ping pong ball.

•place on a plate and chill in the fridge. Then place in an airtight container.
