Your favourite grain isn’t just for savouries and salads guys…quinoa, with its nutty taste is also just as delicious enjoyed sweet. It’s no wonder its a superfood, these little grains are packed full of protein, and a super filling, so perfect for a post work breakfast or a healthy snack for the afternoon. I had something similar a few years ago and thought I’d try my hand at making my own. This is just the right amount of sweet for the morning, and genuinely kept me full until lunchtime (not like the fad cereals that leave your belly rumbling after an hour!)

Ps. The recipe makes 2 big pots full.

Summer berry Quinoa Breakfast Pot

Ingredients:


1 cup of quinoa

1.5 cup water

2 tablespoons full fat yoghurt / 1 cup of almond milk

handful dried cranberries

A couple of chopped dates (optional for added sweetness)

1/2 cup of frozen or fresh summer berries

1 tablespoon honey

Method:


Place the quinoa and water in a pan and put on medium to low heat for around 10 minutes until cooked and the water absorbed. Allow the quinoa to stand until cool.

Stir in the yoghurt and chopped dates and dried cranberries

Blitz the summer berries, honey and a little water (2 tbls) in a smoothy maker, or if you dont have one mash them all together using the back of a fork. Pour this mixture into the quinoa mixture and stir well.

Pour into bowls / pots to take to work and store in fridge until ready to eat.
