Apron On: 10 minute Sri Lankan Curry: Part 2 Pineapple Curry


Sweet, deliciously spicy goodness! This is a curry you wont get at your local Indian, it may sound a little odd, but believe me the pineapple works surprisingly well!

Ingredients:

1 large ripe pineapple

1 red onion

6 cloves garlic

1 inch fresh ginger

3cm stick cinnamon

1/2 can of coconut milk

10 curry leaves

1 tsp curry powder

1/2 tsp Garam masala

1 tsp chilli powder

1 tsp black pepper

1 tsp salt

1/2 tsp turmeric

Method:

Bash the garlic and ginger in a pessle & mortar, and add to the chopped onion.

Add all the spices under the // to the chopped pineapple chunks and mix well.

Put the onion, ginger, garlic, curry leaves, cinnamon into a hot pan of oil (1 tbls veg or olive oil) and fry for 2 minutes until it starts to brown.

Add the pineapple mixture and stir well to cover the spices all the way through. Add 1 cup coconut milk and cook for around 10 minutes on high job until the pineapple has softened.

Serve with rice or alongside one of the other 10 minute curries.
